I realize that this post comes a day late, but I was in too much of a food coma last night to write a post =). As is tradition at LCC, the Study Abroad group has a potluck/feast with the Study Abroad Staff on Thanksgiving Day. Students teamed up to cover all of your typical Thanksgiving-related bases. Students got inventive with their recipes, often having to make certain ingredients from scratch. For example, Stephanie and Cyle made a pumpkin pie completely from scratch. Since we do not have the canned pumpkin mix that most people use to make pumpkin pie, Stephanie and Cyle baked a pumpkin, puréed it, and then went about making the rest of the pie. Despite the fact that I am so far away from the United States, I still felt like last night was a perfect Thanksgiving dinner! There was turkey, stuffing, mashed potatoes, cornbread (mmmm), green-bean casserole, cranberry sauce, apple pie, pumpkin pie, and other delicious traditional Thanksgiving food.
